I rarely make sweet dishes at home except for custard and jelly, which hardly requires any culinary expertise (or patience). I was aware of this missing link in my cookery experiments and since the last weekend I have been trying my hand at sweet dishes. Last week I made Lauki or Bottle Gourd halwa. This weekend, I made Badaam or Almond halwa.
Ingredients for Badaam halwa:

Almonds: 1½ cup - Soak the almonds overnight or for eight hours.

Sugar: 1 cup

Water: 1

Milk: 1 cup

Cinnamon powder: ¼ tsp
-
Cardamom: 4-5 finely ground

Raisins: for garnishing

Ghee: 3 tbsp

Method for Badaam Halwa:
In a non-stick pan, place the sugar and water and cook on medium heat for 15-20 minutes to get a one-string consistency sugar syrup. While the sugar syrup is being prepared, peel the skin of the soaked almonds and grind the peeled almonds with milk, cinnamon powder and finely ground cardamom in a grinder. Add the almond-milk mix to the sugar syrup and continue to cook on medium heat. While the almond-sugar mix cooks on medium heat, continue to stir and add the ghee one tablespoon at a time. Continue to stir and allow to cook at least for 45 minutes or till the halwa comes of the pan easily onto your spatula. Garnish with raisins and serve. You can also mould the halwa into small round balls of sweet.
