This recipe goes out for my dear friend from the glorious days of single hood, Snigs, who requested for this recipe. And also to Agendra, another close friend from my days as a professional struggler, who in spite of many requests to enjoy this dish, couldn’t get a taste of it.
- Ingredients for Fried Lamb Liver or Kaleji (serves 2 people):
- Lamb’s liver in small pieces: 250 gms, washed and drained of water.
- Curry leaves dried: 2
- Finely chopped onions: 2
- Finely chopped tomatoes: 2
- Grated ginger: ½ tsp
- Grated garlic: ½ tsp or 3 large cloves
- Slit green chillies: as per taste
- Whole garam masala (big cardamom, black pepper, cinnamon, and clove : a few of each
- Whole cumin seeds (zeera): ½ tsp
- Turmeric powder: ¼ tsp
- Meat masala: ½ tsp
- Salt: as per taste
- Oil or Ghee: 4 tbsp
- Spring onion, coriander for garnishing
- Soya sauce: ½ tsp for taste and color (optional)
Method:
Heat oil in a pan and add the whole garam masala. When the garam masala splutters, add the curry leaves, and the whole cumin seeds. Add the finely chopped onions and allow it to take a reddish-brown tinge. Add finely chopped garlic and ginger and stir. Add the turmeric powder and the finely chopped tomatoes, and slit chillies. Let the tomatoes simmer till the oil starts separating from the onion-tomato mixture. At this stage, put in the liver pieces and mix well into the onion-tomato masala.
Cover the pan with a lid and allow to cook for 10 minutes on low heat. After 10 minutes, sprinkle the Meat masala and the salt, and slowly stir to mix the masala and liver pieces. Cover the pan again and let cook for 5-7 minutes. If you want, stir in the Soya sauce, and remove from heat. Let it stay for a couple of minutes. Garnish with chopped spring onions and coriander. You can also garnish with deep fried onion rings. When serving as a snack and not with roti, remove the curry leaves, and any whole cardamom outer coverings.
This is a perfect accompaniment to White wine. So, pop the cork and enjoy a mid-afternoon lazy Sunday with fried liver. I am doing the same at this moment, and reminiscing on the good old days of singledom and freaky friends.

I could almost taste the liver while I was reading it. I remember you got it for Santosh when he was ill and that was the 1st time when I tried this. Really awesome. This will go with chilled beer also
I will try making this for Vinayak, he loves liver. and if you have not yet made it for Agendra you should invite him over just for this. Poor M, he does not know what is he missing

Regd making it for Vinayak, I am sure it will come out great because you already have a great knack for cooking. Moreover this recipe doesnt take much time and efforts…
I let the liver cook for more than 20 minutes in a non-stick and it acquired a rich brown color and a slight “charcoalish(bhunna-hua)-onion” flavor which was quite good. Though be careful not to burn it :-). I have been coaxing M to get a flavor of non-vegetarian fare but he is reluctant. I cooked this dish after nearly 9-10 mnths and I am glad I didnt lose the recipe.
Do try this one and let me know. And regd Agendra I guess I will pack him a dabba

August 25th, 2008 at 11:08 am@Snigs, I am really not missing that as I don’t like to eat meat. But on the otherside biwi is enjoying and getting all she wanted to eat since long. Infact she is on non-veg feast since Friday and I am happy she is getting to enjoy non-veg even after marriage …. This was one of her biggest fears also

and I am happy to know that you are comfortable with that. But when it comes to Ansy’s fried liver recipe nothing on earth can match the taste. May be you can only try eating the fried masala without the meat. That itself should taste good.
There’s another thing that she makes, fried peas with jeera and chillies. Has she made that for you yet?
