The 10-minute chocolate pudding

This recipe is half-brain wave and half-inspired by internet research. To cut a long story short, hubby told me he had corn halwa brought by a colleague. I searched online for corn halwa recipe and came across corn starch halwa recipe, commonly known as karachi or sohan halwa in the market. As I read this easy recipe of corn starch halwa, I had the idea to use cocoa and coffee, instead of artificial color or flavoring like saffron. Hence, was born the 10-minute chocolate pudding.

Ingredients:

  •
    • Nuts like cashew, almonds, walnut, and raisins – 1 cup
    • Ghee – 2 tbs
    • Water – 1.5 cup
    • Cocoa powder – 1 cup
    • Corn Starch powder – 1 cup (Smith and Jones)
    • Coffee – 2 tsp
    • Sugar – 1 to 1.25 cups

Method:

Heat one tbsp of ghee in a pan and roast the nuts and raisins. In a bowl, dilute sugar in water, and add cocoa and coffee and mix well. Place this mixture in to the pan with the roasted nuts. Simmer, and slowly add the corn starch powder and mix with spatula so that no lumps are formed. Add the remaining 1 tbsp of ghee and then increase the heat and keep on churning the mixture in the pan. Within a few seconds, the starch will coagulate and will become dough-like and easily come off the surface of the pan. Remove from heat, and allow to cool. Serve chilled as a dessert.

I am sure that this chocolate pudding is a high-calorie dessert but then its a quick saving grace when you want to serve home-made sweet dish. So just dig in and sin!

@Santosh, because I was experimenting more with cocktails and mutton dishes in those days ;-) It tastes typically like a chocolate fudge or a chocolate with nuts, except for the “soft-texture.” Its all about the cocoa.
