Its a weekend and the experimenting cook strikes again. This time the experiment is inspired by the continental breakfast at Raja Cafe in Khajuraho, an establishment owned and managed by two Swiss ladies. When hubby and friends enjoyed pancakes for breakfast, I knew it would be my next experiment at home, and this Sunday I served Apple-Cinnamon Pancakes for breakfast.
Ingredients:

- 2 cups of sifted refined flour (maida)
- 2 cups milk
- 2 eggs
- 1 medium apple – peeled and grated
- 2 and half teaspoons baking powder
- 3 spoons white sugar or honey
- 1/2 teaspoon cinnamon powder
- 1/4 teaspoon cardamon powder
- 1 pinch salt
- Raisins, sultanas, blueberries for garnishing
- Oil for frying
Method:

- In one deep dish mix the dry ingredients – sifted flour, baking powder, cinnamon powder, cardamon powder, sugar and salt
- In another deep dish, slightly whisk in the egg, and then add the milk and grated apple. If using honey then add that also to this mixture. Whisk slightly to mix the ingredients
- In the dish with the dry mixture, fold in the wet mixture and again whisk to mix all the ingredients well.
- Set aside for 5-7 minutes, and in the meantime medium heat oil in a flat pan.
- Pour 1/4 cup of the mixture into the pan and put raisins and blueberries on the upper surface so that they slightly embed as the mixture rises with the heat.
- Cook till golden brown with slightly darker and crispy edges, and the turn to cook the other side.
- Served face-up on a plate with honey, jam, jelley or a syrup of your choice.

D’you know, there is a small cafe in Paris,near the metro station, on St.Germain des Pres which serves the most heavenly pancakes with these ingredients among others. I’ve never tasted anything more heavenly.
